Dilly or Sweet Style
16 ounces wild caught tuna, drained if in water or organic shredded chicken (rotisserie works great)
1 cup chopped celery
1/4 finely diced red onion
1 tablespoon dijon mustard
1/4-1/3 cup diced dill pickle or relish (no sugar)
1 tablespoon erythritol (optional)
1 cup olive oil or avocado oil mayo
Sea salt and pepper
Bibb Lettuce for wrapping
Combine all ingredients except for erythritol lettuce in a medium bowl. Add erythritol to taste (if using) and salt and pepper to taste. Nutritional info is based on ingredients listed. May add more mayo or other items per personal preference.
