These make a great fall appetizer. No one will realize they are low carb!
Personally here at KTWL we eat four of them on a bed of arugula and drizzle a couple of tablespoons of homemade mayo mixed with lemon juice. Quick dinner!
Serves 6: 4 sausage balls per serving
Ingredients:
1 pound freshly ground pork or sausage (sugar free)
1/4 cup almond flour
1 egg
1/2 teaspoon baking powder
1 cup shredded cheddar cheese
1/2 cup parmesan cheese, shredded
Spice Mix:
If using ground pork, add this spice mix (or make up your own) to make sausage:
1 teaspoon salt
dash of cayenne pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
1/2 teaspoon sage
1/4 teaspoon thyme
Directions:
Preheat oven to 375 degrees.
2. Cover large sheet pan with parchment paper. Set aside.
3. In medium bowl, place almond flour, baking powder, and spices (if using). Mix to evenly distribute.
4. Add the rest of the ingredients into the bowl. Gently, but thoroughly mix with your hands until the ingredients are combined.
5. Using a cookie scoop, or your hands divide the meat mixture into 24 equal balls. Place on the sheet pan.
6. Bake for 15-20 minutes or until the sausage is cooked and the edges are browned. Cool on the sheet pan for several minutes. Serve and enjoy. If desired, serve with a mayo based sauce or sauce of choice. Macros for sauce not included.
