Pepperoni Cup Appe-teaser!



Sometimes, an Appe-teaser (the deliciousness before or often instead of a meal) can be simple and satisfying at the same time. This one, fills the bill and if often taken to along to share at events and parties.


Spinach n' Cheese Pepperoni Cups


Ingredients:


1 pkg frozen spinach, thawed, squeezed dry

48 regular pepperoni

2 eggs, lightly blended

½ cup mozzarella or feta cheese (or any you like)

¼ cup finely chopped red onion

2 tsp greek seasoning

Salt and pepper to taste


Directions:


Preheat oven to 375°


Equipment Needed: 24 mini muffin cups


Place two pepperoni in bottom of each mini muffin cups.


Combine rest of ingredients in a bowl.


Divide evenly in the cups.


Bake for 15- 20 minutes until set and cheese is melted. Serve warm or at room temperature.



For Italian version use Italian seasoning and swap out cheese to Parmesan. I have also add red fire roasted peppers. Get creative. This recipe is as versatile as your creative flows.
