Serves 6 (approx 1.5 ounces each)
Ingredients:
2 cups sharp cheddar cheese, shredded (8 ounces)
3/4 cup almond flour (approx 3 ounces)
2 tablespoons flax or hemp seed
Directions:
Preheat oven to 350 degrees.
Place cheese in microwave safe bowl and melt. Add almond flour and flax seed and stir until mixed. Sometimes it's easier to use your hands after most is mixed to make sure flour is completely incorporated.
Place cracker dough between two pieces of parchment paper and roll to 1/8" thick. Remove one side of parchement and cut into equal size squares. Poke holes in tops of crackers. Remove to baking sheet leaving small space between each.
Bake 8-10 min. Crackers harden more as they cool. Feel free to bake longer as desired. Watch for thin edges that may burn or darken sooner and remove those pieces earlier.
When completely cool, store in an airtight container.
Note: If crackers are not crisp when cool, or soften before eating, they can be toasted in a toaster oven. Use a tray or foil on the bottom for any oil that drips.
A favorite way (pictured) is to fill will almond butter for a substantial snack.
